Keto Blueberry Muffins (Heavenly!)

These keto blueberry muffins taste absolutely heavenly! Especially warm with some melted Kerrygold butter. Yum!!! I personally like making them with frozen blueberries because the extra moisture spreads the blueberry flavor throughout the muffin. These are so good, I made them three times in one week! Good thing we got the almond flour in bulk! And the best part is, they're healthy and you can have them without feeling guilty! I'm thoroughly convinced these are just as good, if not better than non-Keto muffins! I have also attempted to use tart cherries instead of the blueberries. They are still good, but a little tart for my taste.

Ingredients:
  • 2 1/2 cup Almond Flour 
  • 1/3 cup Monk Fruit Sweetener (We use Lankanto sweetener)
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/3 cup melted Butter
  • 1/3 cup Unsweetened Almond Milk
  • 3 large Eggs
  •  1 tsp Vanilla Extract
  • 2/3 cup fresh or frozen Blueberries


Directions:
  • Preheat oven to 350 degrees Fahrenheit, and set cupcake liners in a pan.
  • Melt the butter in the saucepan. In a medium sized bowl, combine all the dry ingredients. When the butter is melted, add the wet ingredients and gently mix.
  •  Fold the blueberries into the batter. When this is done, fill the cupcake liners about 3/4 of the way. (They rise a little) Put the pans in the oven and bake for about 20 to 30 minutes or until golden brown. Wait a couple minutes to let them cool, then serve!

American Heritage Girls...Part 2!

AHG's Mission:
"Building women of integrity through service to God, family, community and country."


As you all probably know, I love being an American Heritage Girl! I have earned badges while learning new skills and taking up new hobbies. I get to participate in service projects, skits, games, and fun campouts with my troop, family, and friends!

Stamp collecting is my newest hobby I got into while trying to complete the Special Delivery badge.  My personal favorite badge is Cake Decorating. (I bet you can guess why.)
Twice a year we have something called a COA, Court of Awards, and it's a party that you attend to celebrate all the badges that you and your troop have earned. You also can earn service hour stars to sew on your vest or sash at COAs.

American Heritage Girls is kind of like Girl Scouts, only we're Christian-based.
We participate in service projects, such as Feed My Starving Children, help out at food banks, go caroling, and help in our communities.  Here is the AHG Oath:

When you become an American Heritage Girl, you get an AHG handbook which tells you all about the badges, what you need to do to earn them, what to expect in AHG, and songs that you can learn.

In AHG you don't just earn badges. You can also receive sport pins. If you like to compete in sports and play games, that's great! There are several pins you can earn to go on your vest or sash such as: basketball, ice skating, tennis, bowling pin (I know, ironic right?), soccer, competitive swimming, gymnastics, martial arts, running, softball, and volleyball.

There are several skits that we perform in AHG and one of my favorite skits and it is called: The Invisible Chair.

In AHG, it is important to memorize "The Pledge of Allegiance", The AHG Creed, and the AHG Oath.

The AHG Creed:

As an American Heritage Girl, I promise to be:


Compassionate - Understanding others in fellowship, empathy, kindness, and caring. 
Respect others' opinions and emotions.



Helpful - Willingly serve others.



Honest - Always tell the truth and keep my promise.



Loyal - True to God, family, friends, community and country.



Perseverant - Continuing to strive toward a goal despite obstacles.



Pure - Keep my mind and body pure.



Resourceful - Wisely use my time, materials and talents.



Respectful - Honor my country, be obedient to those in authority and courteous to all.



Responsible - Accountable for my own actions. Reliable in all situations.



Reverent - Faithful and honoring to God. Respectful to the beliefs of others.


There are five Program Levels:
  • Pathfinder
The Pathfinder unit is from 5-6 years old. They wear a blue AHG shirt and since they aren't quite old enough to earn badges, they earn beads to add to a necklace they wear during a meeting. When leveling up out of this category, you may earn the Fanny Crosby Award.
  • Tenderheart
6-9 year olds are in the Tenderheart unit. They wear a white collar shirt with a red vest, blue handkerchief to go around your neck, and blue or khaki skirt, shorts or jeans. The badges that you earn have to be blue edged. When leveling up out of this category, you may earn the Sacagawea Award.                              
  • Explorer
The Explorer unit is from ages 9-12. They also wear a white collar shirt, blue vest, and with a red handkerchief to go around your neck, and blue or khaki skirt, shorts or jeans. The badges that you earn have to be red edged. When leveling up out of this category, you may earn the Lewis and Clark Award.
  • Pioneer 
The Pioneer unit is from 12-14 year old. They wear a white collar shirt also, blue sash, blue or khaki skirt, shorts or jeans. The badges and stars that you earn have to be silver or gold edged. When leveling up out of this category, you may earn the Harriet Tubman Award.
  • Patriot
And last, but not least.... the fifth unit is the Patriot level for 14-18 year olds. They wear a red collar shirt, blue sash, blue or khaki skirt, shorts or jeans. The badges and stars that you earn have to be silver or gold edged. When you  graduate from AHG, you may earn the Dolley Madison Award.

Book Review: Serafina and the Black Cloak

I have another book review to share with you! Serafina and the Black Cloak is a creative mystery in a series of three entitled: Serafina and the Black Cloak, Serafina and the Twisted Staff and Serafina and the Splitntered Heart. All were written by Robert Beatty. He has also made the newest book: Willa of the Wood, that isn't based on Serafina, but takes place in the same world. (I will write a review on each book in the future.) I honestly can't make up my mind which one I like best because they're all really good.

Serafina and the Black Cloak is about a strange, but smart girl who lives in the basement of Biltmore Estates, completely unknown to the outside world. She discovers more about who she is when she's accidentally seen from the house master's nephew, Breaden. She knows almost everybody in the mansion has a job and her job is the C.R.C. (Chief Rat Catcher). I know it doesn't sound like the best job ever, but having a weird job isn't the strangest thing about her. Her adoptive father tells her nothing about his or her past, until she starts asking questions. Her father always told her "Never go into the deep parts of the forest, for there are many dangers there, and they will ensnare your soul."

She suspects a servant of Biltmore Estates is behind a sinister plan, as children are disappearing in the night. Even though it can be a little scary, I think it's a very inventive story. It even kinda spooked me a little bit, but I haven't had any nightmares at all. There have been trailers for these books too, but you should read the book, as I don't feel they give important details as the book.

Keto Chocolate Peanut Buttercups


My mom and dad have been on the Ketogenic diet for a few months so we have been trying to make our own food using real ingredients. Staying away from carbs and sugar, which are bad for your body. One of my favorite desserts you can have on the ketogenic diet is: Chocolate Peanut Buttercup Fat Bombs. They are so good and they taste just like Reese's Peanut Buttercups!

Here is a recipe we came up with using xylitol as a sugar substitute, but you can use any sugar substitute using a 1:1 sugar sub.

Ingredients

2 -3 tablespoons 100% Cacao Powder (we use Hershey's)
1 stick of butter
1/2 cup Natural Peanut Butter (without sugar)
3-4 tablespoons Xylitol (or another sugar substitute)

Directions
  1. In two separate sauce pans, divide one stick of butter in half and melt each on low heat.
  2. When butter is completely melted, Add cacao powder and xylitol in one pan.
  3. In the other pan, put the peanut butter and the other half of xylitol in.
  4. Be sure to keep stiring them so the xylitol can break down.
  5. Using a silicone mold put the chocolate in each section half way up.
  6. Place the mold in the freezer for a few minutes for the chocolate to set.
  7. Once the chocolate is set in molds, put the melted peanut butter mixture in each section of the mold covering the chocolate.  
  8. Freeze for about an hour and then eat!
Trick: We blend Xylitol in our magic bullet to make it the consistency of powdered sugar. Makes it easier to dissolve in the mixture. Also, you could use one sauce pan and mix the ingredients together, instead of doing them separately. We prefer to separate to get both flavors like Reese's.

A word of caution: Like chocolate and strawberries, xylitol can be poisonous for your dog. So please keep the peanut butter away from your dog.

Have you ever wondered what the circular thing hanging on the side of your home was? They call that a Smart Meter. Most people say it’s harmless, but it’s just making your life shorter by dosing you with radiation throughout your day and night while you sleep. It could be making
you feel dizzy, cause you to have eye problems, have ringing in ears, and knows
everything you are doing.



Try to find one on the outside of your home. You may find it on the sides, back, or even on a pole next to your home. If you live in a townhome, you may have 8-10 of these right next to where you lay your head at night. That’s scary. This is a community problem.Try looking for them on your neighbors homes. Keep in mind, no matter if it is facing your house or not, it is
constantly sending radio waves everywhere (communicating to other meters and the power
company.) The safest distance from a smart meter is further than 90 feet away!

Can it be prevented?
Yes. There are several ways to prevent this. You can pay money to the power company to keep this “Smart” Meter off your home. If you call your electric company to take it off, don't be surprised if they say: "It's not as dangerous as it used to be." Don't believe them. They are still radiating information hundreds of times a day with other meters and the power company.

You can also build an inexpensive faraday cage over the smart meter. It’s really easy.
My dad installed one on ours and our neighbors so we wouldn’t be

Hockey

The reason my blog is called A Sk8r Girl, is because I love hockey. I love hockey because my Dad played hockey too. I use to go to his games all the time when I was little. That's probably how I got interested in hockey. I started skating when I learned to walk, now I'm trying to get my little sister on the ice, so I have a buddy to skate with. I'm not like those girls who want to stay in and have a tea party with their dolls. I want to go play hockey, play other sports, and climb trees outside.

One winter in Illinois, my parents and I (my younger sister wasn't born yet) built a hockey rink in our backyard!

Ever since I started skating I've always been a fan! No sport can get in the way of hockey! Other sports can give you skinned knees or you can get cuts, but not hockey! In hockey, you can get a busted lip, necks cracking, bodies getting beat up and concussions. You also hear the crowd in the stands shouting, "fight, fight, fight!" This is when hockey players break into a fight. 
My favorite team is....the Chicago Blackhawks! They are known for wining six Stanley Cups and they are also known for being apart of the "Original Six" ,along with the Detroit Red Wings, Montreal Canadiens, Toronto Maple Leafs, Boston Bruins and New York Rangers.

Homeschooling

Homeschooling isn't really a pain at all. Well, maybe just for a mother with a one and a nine-year-old.
I like being homeschooled. You get to be with your family all day, you don't need to wake up early, and you don't have to get out of your pjs!
Sometimes I work on school at night so I have free time during the day.
Actually, some days we start with history and our assignment is to make pottery. I made a vase like the Minoans who lived on Crete.
My mom had me create a timeline so I can always look back and remember if I forget.
Some of my favorite subjects are math, piano, and cooking.
I like math so much ... I want to do more work! and I have thirty problems, plus the warm up. I'm in fourth grade and I complete mostly fifth grade work.
 I 'm learning piano quickly because I can practice all day. I like to play the song ''Let It Go'' on the piano for my family. Last night  I performed the song ''Let It Go'' on the piano while singing for a lot people.
When my mom found out I was interested in piano, she found online lessons called Hoffman Academy to help me learn. He's really good at piano and teaching it! His lessons are free and there's twenty lessons in each unit. There's also eight units. Here's a link to go to his website. http://www.hoffmanacademy.com.
I love cooking. I love it so much, I make up excuses to not do homework so I can cook. I've been helping my Mom cook since I was three. Now I know how to brown beef, boil chicken, make hamburgers, cook chicken in the cast iron skillet, and etc.
